Heat oil in a skillet over medium-high heat until shimmering.
Add diced potatoes, salt, black pepper, and cayenne. Cook for 5-7 minutes until browned.
Reduce heat to medium and stir in onion and bell pepper. Cook for 5 minutes until onions are translucent.
Increase heat to medium-high, add pulled pork, and stir well to combine.
Press the mixture down slightly to sear, cook for 4-5 minutes, then flip and cook another 3-4 minutes.
Serve hot and garnish with parsley if desired.
